Hello my beautiful people. If you have ever had a conversation with me, you know I LOVE my chocolate chip pancakes. Like, eat them every morning for breakfast LOVE them. But, as we have all found out (or will find out), our metabolisms don’t exactly agree with eating pancakes every morning. So, in an effort to step out of my breakfast comfort zone and work toward a healthier diet, I called upon Courtney, a gal who knows way more about healthy eating than I do. She gave me some alternative breakfast selections, complete with aesthetically pleasing pictures (duh). I hope you enjoy this little article she wrote about some healthy breakfast choices!

Do you ever find yourself feeling sluggish, tired, or just plain grumpy in the afternoon? Listening to your body can be really tricky, it is something I still struggle with all the time. One thing I have learned about myself over the past few years is that breakfast is a must. It is so important that you start your day off with a good source of energy to prevent feeling the mid-day ‘slump’. I would even go as far as to saying that a good, healthy breakfast gives me, personally, double the energy of a cup of coffee! Here is why:
No matter how you begin your day whether you have early morning classes, a spin class, or work, eating a wholesome breakfast is essential.
And no, sadly, chocolate chip pancakes don’t count.
Here are the three things I keep in mind when preparing breakfast:
- What is my body craving this morning?
- How much time do I have?
- What protein can I add to help me get through my morning without crashing?
*some good sources of protein: pumpkin/hemp seeds, peanut butter, almonds, oats, wheat bread, eggs, and chickpeas.
Homemade Smoothie Bowl
Here all you need is the smoothie base (1 cup frozen or fresh berries, ½ banana, ½ cup milk-I use coconut or almond, and a spoonful of greek yogurt if desired)
Then just have fun adding toppings (my go-to toppings are granola, strawberries, bananas, chia seeds, and a melted almond butter drizzle)
*This one takes some time, but if you are in a rush just make a smoothie to-go!
Savory Veggie Bowl
Craving something savory? This veggie bowl is perfect. It includes a spinach base, tomato, avocado, feta cheese, and an over-medium egg. Pretty much a breakfast sandwich without the bread.
Scrambled Tofu Wrap
For any vegans, this is THE BEST recipe ever. Simply mash tofu with a fork and add turmeric, salt, and pepper. Then cook on medium until it starts to golden. Here I have a whole wheat wrap with scrambled tofu, yellow peppers, tomato, avocado, and spinach.
Half & Half
A lot of the time, I am craving both savory and sweet. Here I just have scrambled eggs with lots of spinach AND multigrain toast with almond butter, banana, and chia seeds. The best of both worlds forreal.
Greek Avocado Toast
There is an abundance of things you can do with avocado toast. Here I just have avocado, tomato, chickpeas, and feta. Made in less than 5 minutes!
Of course, these are just the ideas that I love! Feel free to be creative about your
